We’ll be keeping it simple for this one. A lot of traditional Ayurvedic recipes that I’d like to share with you require the use of certain Himalayan Herbs that may be hard to come across in your local grocery stores. For this purpose, I chose a meal that everyone will be able to access the ingredients to and we can plan some more complex dishes in the near future. We will be making a Carrot and Ginger soup with Roasted Chickpeas.
This is a dish many of you have most likely had before. However, we’ll have fun diving into the Ayurvedic perspectives on why this dish and the spices used are so healing, especially during this time.
Ingredients Required:
Soup- (serves 4)
4 cups water
2 tsp coriander powder
1 lb carrots
2-3 inches fresh ginger root
2 tsp ghee, olive oil, or sunflower oil (have a lil extra for drizzling)
Salt and Pepper to taste
Roasted Chickpeas- (serves 6-8, leftovers make a great snack!)
2 cups of cooked chickpeas (for time purposes, plan to have these cooked prior to class or you can use two ready to go 16oz cans)
2tbsp apple cider vinegar
2 tsp sunflower oil
Dash of salt
1 tsp cumin powder
1/4 tsp turmeric powder
1/4 tsp ginger powder
1/4 tsp black pepper
1/8 tsp tsp cayenne pepper
pinch of clove powder
*Try to have this all relatively pre-portioned, or somewhat organized prior to joining the Zoom meeting. It will help once we get started, that way you’re not having to shuffle through your pantry or cabinets and miss out on the discussion or direction.
Materials Needed: A functioning stove top and oven :) Medium saucepan Immersion Hand Blender or Carafe Blender Peeler (not required, a knife could be used in its place) Strainer (to rinse and drain chickpeas) Baking sheet Ladle for serving Im really looking forward to seeing you!
